Discuss the Methods for Evaluation

Tell him if it will be formal or informal as well as what your criteria will be for assessing his conduct. If there are any categories which are particularly important such as honesty or salesmanship, make sure to let him know about these as well.
Create a To-Do List or Checklist
It can be overwhelming for an employee who is the first person to a business. Often times this first person is going to be functioning as your hands and feet and handling a wide variety of tasks.
This person is obviously going to need to be flexible, but being flexible is not the same as being a mind reader. Make sure that you avoid miscommunications by having to do list or checklist for him to use.
You can prepare a general sheet and update another one with new projects or you can prepare a new one for each day or week as you have need.
